MAYONNAISE & DRESSING
Mayonnaise and other types of dressings are characterized by their glossiness, creamy and full mouthfeel and high viscosity. This kind of product is achieved by mixing water and oil, the so-called emulsion, typically with egg yolk as emulsifier and gums as stabilizer. Because of its complex chemical structure, emulsion stability is a crucial factor of product quality. Additionally, cost effectiveness is also something desirable in the production.

MODIFIED POTATO STARCH
We provide modified potato starch specifically for condiments, in which it is possible to reduce the amount of egg yolk or stabilizer. By such reduction, cost effectiveness can be achieved, while the end product retains its stability.

SAUCES & LIQUID SEASONINGS
Sauce and liquid seasoning are sometimes used as dip, but most of the time it is incorporated in dishes to provide viscosity and flavor. In most cases stability against heat, pH, and sugar is very important for shelf life.

STEVIA
Naturally extracted from Stevia rebaudisiana leaves, MORITA Stevia is a bake-stable, pH-stable natural sweetener with 200 - 300 times sucrose sweetness. Our stevia products include a unique type designed to accentuate umami flavor, making it a natural alternative to flavor enhancers.

BATTERING & COATING PREMIX
Fried foods have been one of the comfort foods for Indonesians, and it is recently regaining its popularity thanks to emergence of batter fried chicken and tempura. The challenge of battering & coating applications is the diverse texture and prolonged crunchiness under the stress of moisture from air or other foodstuffs such as rice or sauce.
